Beef Tips and Rice
- one cup rice
- two cups water
- 2 small grilling steaks, cut into small pieces
- 1 cup water
- 1 pkg. onion gravy mix
In a rice cooker or on the stove, cook first three ingredients for fifteen minutes or until tender.
In a hot skillet, cook the steak tips in a small amount of water, stir frying until cooked through (water keeps meat from sticking and adds no calories). Season with salt and pepper. Combine onion gravy mix in one cup water, add to cooked meat, reduce heat to medium stirring until gravy thickens.
Serve meat mixture over rice.
Note: I may use two packets of gravy if I do this again. One onion and one brown gravy so there is more to go around. I will also add steamed broccoli and carrots to the meat mixture. I didn’t have time last night.
I am pleased to write that today we saw no rain. It was cold as all get out and the wind the blew could cut your through with a bone chilling knife, but it was dry. Snow that lingered from last Thursday melted a little more, but in some areas it is still lingering.
I had lunch with a few friends today and ran some errands before going to sing with my choir at Valley View Baptist church. All around it was a very good day.
Squire Parsons came to our church today. He has been ill and is recovering from a heart attack that happened last October. It was good to see him again and to hear his inspiring music for the Lord. He even had two or three new songs which he’d written. His son Samuel came with him. They sang a few duets. And even Samuel’s wife Leah sang a song or two. We had a good service. I hope you have a blessed day.
Update on my power situation: Electric company finally fixed the problem by replacing a transformer which restored power to my house around 9 p.m. on Saturday night. I was able to go home finally today. Yeah!!
Still no power today. Electric company has come out, but no results yet. Camping out at my parents and writing. At least I’m making progress on my manuscript if nothing else is getting done today. Because of these circumstances I’ll keep this post short and sweet.

My internet service is driving me crazy. I cannot get connected half the time and when I do I can’t even post my blog before it disconnects.
The transformer that provides power to my house caught on fire. Flames were shooting from the top. And my power went out.
Well we got snow…and ice…and I slid all the way home. I couldn’t make it up my drive so my car ended up in the front yard. But I wasn’t hurt nor was my car. And I had the loveliest story to spend my evening reading. It’s the latest by Carolynn Carey which will be out very soon. I had the opportunity to read an advanced copy of My Cupcake, My Love.
