Microwave Mashed Potatoes

The old fashioned way of making mashed potatoes is to peel them and cook them on the stove. However, here’s a new twist. Wash, pat dry, but do not peel them. Put the potatoes in the microwave in a bowl covered with plastic wrap and cook for 8 minutes.

Ingredients:

  • 4 or 5 potatoes
  • sour cream
  • fat-free chicken broth
  • butter
  • salt to taste

Mash potatoes with a mixer or by hand. Add the salt, butter, sour cream and fat-free chicken broth.
