Beef Tips and Rice
Ingredients:
- one cup rice
- two cups water
- salt
- pepper
- 2 small grilling steaks, cut into small pieces
- 1 cup water
- 1 pkg. onion gravy mix
In a rice cooker or on the stove, cook first three ingredients for fifteen minutes or until tender.
In a hot skillet, cook the steak tips in a small amount of water, stir frying until cooked through (water keeps meat from sticking and adds no calories). Season with salt and pepper. Combine onion gravy mix in one cup water, add to cooked meat, reduce heat to medium stirring until gravy thickens.
Serve meat mixture over rice.
Note: I may use two packets of gravy if I do this again. One onion and one brown gravy so there is more to go around. I will also add steamed broccoli and carrots to the meat mixture. I didn’t have time last night.
