Pork Tenderloin with Pineapple Brown sugar glaze
I was trying to use up a fresh pineapple that I bought when I tried this. I also had two thick cut pork chops. I cut them in half and seared them in a covered fry pan with a little water. As the water was depleted I added more, while cooking the pork pieces on medium-high heat. While this cooked I cut up the pineapple into small pieces. When I was ready to turn the pork over, I added more water and sprinkled in about 1/4- 1/3rd a cup of brown sugar, mixing it with the water to dissolve. Then I added in the pineapple chunks. Continuing to cook until the pork chops were done. Adding more water if necessary.
My picky eater doesn’t like the pineapple and he hasn’t been crazy about putting brown sugar on polish sausage either (I’d sprinkled some on and squirted mustard on it, quite good if you want to give it a try) so I wasn’t sure how he’d react to this. He loved it. Wanted more. He makes me feel like a gourmet when I experiment in the kitchen and he enjoys my creations.
