As Thanksgiving approaches I’d like to give you a few good recipes for side dishes for your Thanksgiving Feast. This one is a favorite of mine. It goes so well with ham.
Pineapple Casserole
Ingredients:
- 2 large cans of chunk Pineapple (drained – very important)
- 2 cups of shredded mild cheddar cheese
- 1 cup of granulated sugar
- 6 Tablespoons of flour
- 3/4 package of Ritz crackers, crushed to crumbs
- 1 stick butter melted
Preheat oven to 325°. Lightly grease a 13x9x2 baking dish. Mix together drained pineapple and cheddar cheese. Stir together sugar and flour, then sprinkle over pineapple mixture, stirring until combined. Pour into baking dish. Sprinkle cracker crumbs over it and drizzle with melted butter. Bake for 34-40 minutes until golden and bubbly.
